A group of Chugiak High students butchered a moose in class

Students in Brian Mason’s class at Chugiak High didn’t ace their big test Tuesday. They butchered it.

That is great. Wish I could of raised my son in such a place where he’d have the opportunity to do that in a high school classroom.

About 35 years ago I brought a trophy pronghorn antelope into a vocational school in Brooks, Alberta that I shot a hour before. The kids dressed it and caped it. An uncle came in after we let it hang and showed the teenagers how to butcher it. We had a meal for the students and staff and guests later. My recollection of the meat was that it was very lean and a taste that closely approximated sage brush. Deer on the other hand were grain/hay fed and had a much milder taste.
