Like someone else said, you wont find a coach with ejectors. Many coach guns are used for cowboy action shooting which forbids ejectors.
My recommendation is the CZ hammer coach. Its spendy, but its an incredibly well made and beautiful coach gun with exposed hammers. There are a few chinese manufactured hammer coaches out there with a lower build quality, and ymwv.
